Redfish Cakes

I found this recipe on a forum and decided to give it a try.  If you like Crab Cakes or Salmon Patties, you’ll enjoy this one.



Olive Oil (for frying)
3 Medium Russet Potatoes
4 Redfish Fillets (2 redfish)
2 Tablespoons of Powdered Crab Boil
2 Cups of Italian Bread Crumbs
1/3 Cup of Parsley
1 Onion (Finely Chopped)
1 Tablespoon of Butter (for sautéing onion)
4 Tablespoons of Grated Parmesan
1 Tablespoon of Minced Garlic
1 Teaspoon of Salt
1/2 Teaspoon of Black Pepper
4 Eggs Lightly Beaten

Cooking Instructions

1. Peel, cut, and boil the potatoes until almost fork tender and then mash them up.

2. Fill a large pot with water and add the crab boil. Heat on high until the water begins to boil and then add the fish. Boil the fish until it flakes easily-don’t overcook. (8 minutes maybe?) Drain and flake the fish with a fork. Be sure there are no bones.

3. Sautee the onion in the butter until it begins to soften. Mix it with the flaked fish, the potatoes and the rest of the ingredients and blend well by hand.

4. Form the mixture into patties about the size of a golf ball and then flatten out into a patty. Fry them on medium in a cast iron skillet with olive oil until golden brown on both sides.
Makes about 20 fish cakes depending on size.
